How To Make Friday Night Fish Pie

Ingredients

  • 500g white fish fillets, such as cod or haddock
  • 2 large potatoes, peeled and diced
  • 1 leek, sliced
  • 1 carrot, diced
  • 1 cup frozen peas
  • 2 cups fish stock
  • 1/2 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Place the diced potatoes in a saucepan and cover with cold water. Bring to a boil and cook for 10 minutes or until tender. Drain and set aside.

  3. In a separate saucepan, melt the butter over medium heat. Add the leek, carrot, and peas. Cook for 5 minutes until softened.

  4. Sprinkle the flour over the vegetables and stir well to coat. Gradually pour in the fish stock and milk, stirring constantly until thickened. Season with salt and pepper.

  5. Add the fish fillets to the saucepan and gently simmer for 5 minutes until cooked through.

  6. Transfer the fish mixture to a baking dish and top with the cooked potatoes.

  7. Bake in the preheated oven for 20-25 minutes or until the top is golden and the filling is bubbling.

  8. Serve hot, garnished with fresh parsley.
