Ingredients

  • 1 small maple squash, peeled, seeded, and cubed
  • 4 slices of bacon, cooked and crumbled
  • 1 cup of blueberries
  • 1/4 cup of maple syrup
  • 1/4 teaspoon of cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a baking dish, combine the cubed maple squash, maple syrup, cinnamon, and salt. Toss to evenly coat the squash.

  3. Bake in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized.

  4. In a skillet, cook the bacon until crispy. Remove from the skillet and crumble.

  5. In a separate skillet, add the blueberries and cook over medium heat for 2-3 minutes, or until they start to burst.

  6. To assemble, spoon the creamy porridge into bowls. Top with the maple-glazed squash, crumbled bacon, and cooked blueberries.

  7. Serve warm and enjoy!
