How To Make Pearled Spelt with Tarragon & Red Grapes

Ingredients
- 1 cup pearled spelt
- 3 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon fresh tarragon leaves, chopped
- 1 cup red grapes, halved
- Salt and pepper, to taste
Instructions

In a medium pot, bring the vegetable broth to a boil. Add the pearled spelt and cook for about 20 minutes until tender. Drain any excess liquid and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened and fragrant.

Add the cooked pearled spelt to the skillet and stir well to combine with the onion and garlic.

Stir in the fresh tarragon leaves and red grapes. Cook for another 5 minutes, until the grapes are slightly softened.

Season with salt and pepper to taste. Serve hot.
