Ingredients

  • 4 eggs
  • 1 lb hot-smoked salmon
  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • 1/4 cup croutons
  • Salt and pepper to taste

Instructions

  1. Place eggs in a pot and cover with cold water. Bring to a boil, then reduce heat and simmer for 8 minutes. Remove from heat and place eggs in ice water to cool. Once cooled, peel and quarter the eggs.

  2. In a large bowl, combine romaine lettuce, cherry tomatoes, and hot-smoked salmon. Toss to combine.

  3. Add grated Parmesan cheese, Caesar dressing, and croutons to the bowl. Season with salt and pepper, then toss to coat all the ingredients with the dressing.

  4. Divide the salad among 4 plates, and top each plate with the quartered boiled eggs.

  5. Serve immediately and enjoy!
