Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups cream cheese
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup diced peaches
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup cold butter

Instructions

  1. Preheat the oven to 325°F (160°C).

  2. In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press into the bottom of a 9-inch springform pan.

  3. In a separate bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs, one at a time, and vanilla extract. Mix until well combined.

  4. Fold in the diced peaches and pour the mixture over the crust in the springform pan.

  5. In another bowl, combine the flour and brown sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle the streusel over the cheesecake batter.

  6. Bake for 45 minutes, or until the center is set. Let cool before removing from the pan.

  7. Serve chilled and enjoy!
