How To Make Mushroom & Rice One-Pot Recipe

Ingredients
- 2 cups of mushrooms, sliced
- 1 cup of white rice
- 1 small onion, diced
- 2 cloves of garlic, minced
- 3 cups of vegetable broth
- 1 tablespoon of olive oil
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Chopped fresh parsley, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

Add the mushrooms and cook until they release their moisture and start to brown.

Add the rice, thyme, salt, and pepper to the pot and stir to combine.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid has been absorbed.

Remove from heat and let it sit for a few minutes before fluffing with a fork.

Garnish with chopped fresh parsley before serving.
