How To Make Miso Mushroom & Tofu Noodle Soup

Ingredients
- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 cup sliced mushrooms
- 1 cup cubed tofu
- 2 cups cooked noodles
- 2 green onions, sliced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions

In a large pot, bring the vegetable broth to a boil.

In a small bowl, whisk together the miso paste and a ladleful of the hot broth until smooth. Add the miso mixture to the pot and stir.

Add the mushrooms, tofu, cooked noodles, green onions, soy sauce, sesame oil, grated ginger, and minced garlic to the pot. Season with salt and pepper to taste.

Simmer for 10 minutes until the mushrooms are tender and the flavors have melded together.
