Ingredients

  • 1 cup Arborio rice
  • 2 ½ cups vegetable broth
  • 1 cup diced bell peppers (assorted colors)
  • 1 cup diced zucchini
  • 1 cup diced carrots
  • 1 cup frozen peas
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. In a microwave-safe dish, combine the Arborio rice and vegetable broth. Microwave on high for 6 minutes, then stir.

  2. Add the diced bell peppers, zucchini, carrots, and peas to the dish. Microwave on high for an additional 8 minutes, stirring halfway through.

  3. In a separate microwave-safe bowl, combine the grated Parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Microwave on high for 1 minute.

  4. Pour the Parmesan mixture over the cooked risotto and vegetables. Stir well to combine.

  5. Microwave on high for an additional 5 minutes, or until the risotto is creamy and heated through.

  6. Serve hot and enjoy!
