How To Make Microwave Risotto Primavera

Ingredients
- 1 cup Arborio rice
- 2 ½ cups vegetable broth
- 1 cup diced bell peppers (assorted colors)
- 1 cup diced zucchini
- 1 cup diced carrots
- 1 cup frozen peas
- ¼ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste

In a microwave-safe dish, combine the Arborio rice and vegetable broth. Microwave on high for 6 minutes, then stir.

Add the diced bell peppers, zucchini, carrots, and peas to the dish. Microwave on high for an additional 8 minutes, stirring halfway through.

In a separate microwave-safe bowl, combine the grated Parmesan cheese, olive oil, minced garlic, Italian seasoning, salt, and pepper. Microwave on high for 1 minute.

Pour the Parmesan mixture over the cooked risotto and vegetables. Stir well to combine.
