Ingredients

  • 1 cup of long-grain rice
  • 1 ½ cups of chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup of frozen peas
  • 1 cup of cooked shrimp
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of turmeric
  • Salt and pepper to taste

Instructions

  1. In a microwave-safe dish, combine the rice, broth, onion, garlic, bell peppers, and peas.

  2. Cover with a microwave-safe lid or microwave-safe plastic wrap, leaving a small vent for steam to escape.

  3. Microwave on high for 10 minutes.

  4. Carefully remove the dish from the microwave and stir in the shrimp, smoked paprika, turmeric, salt, and pepper.

  5. Cover and microwave for an additional 10 minutes, or until the rice is cooked and the shrimp is heated through.

  6. Let the paella sit for a few minutes before serving to allow the flavors to blend.
