How To Make Mediterranean Spelt-Stuffed Peppers

Ingredients

  • 4 medium bell peppers, tops removed and seeds removed
  • 1 cup cooked spelt
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, pitted and chopped
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large mixing bowl, combine the cooked spelt, cherry tomatoes, kalamata olives, feta cheese, parsley, oregano, olive oil, salt, and pepper. Mix well.

  3. Stuff each bell pepper with the spelt mixture, pressing it down gently.

  4. Place the stuffed peppers in a baking dish and cover with aluminum foil.

  5. Bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 10 minutes, or until the peppers are tender and slightly charred on top.

  6. Remove from the oven and let the peppers cool for a few minutes before serving.
