  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup toasted almonds
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, avocado, red onion, feta cheese, and toasted almonds.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat evenly.

  4. Serve immediately.
