Ingredients

  • 1 cup all-purpose flour
  • 1 cup water
  • 2 eggs, beaten
  • 1 cup kimchi, chopped
  • 1/4 cup kimchi juice
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon salt
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, whisk together flour and water until smooth.

  2. Add beaten eggs, chopped kimchi, kimchi juice, green onions, soy sauce, sesame oil, and salt. Mix well.

  3. Heat a non-stick skillet over medium heat and add a drizzle of vegetable oil.

  4. Pour a ladleful of the kimchi pancake mixture onto the skillet and spread it evenly into a thin round shape.

  5. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook for another 2-3 minutes.

  6. Repeat with the remaining batter.

  7. Cut the pancake into bite-sized pieces and serve hot with soy dipping sauce or spicy mayo.
