How To Make Kimchi Jeon (Spicy Kimchi Pancake)

Ingredients
- 1 cup all-purpose flour
- 1 cup water
- 2 eggs, beaten
- 1 cup kimchi, chopped
- 1/4 cup kimchi juice
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon salt
- Vegetable oil for frying
Instructions

In a large mixing bowl, whisk together flour and water until smooth.

Add beaten eggs, chopped kimchi, kimchi juice, green onions, soy sauce, sesame oil, and salt. Mix well.

Heat a non-stick skillet over medium heat and add a drizzle of vegetable oil.

Pour a ladleful of the kimchi pancake mixture onto the skillet and spread it evenly into a thin round shape.

Cook for 2-3 minutes until the bottom is golden brown, then flip and cook for another 2-3 minutes.

Repeat with the remaining batter.

Cut the pancake into bite-sized pieces and serve hot with soy dipping sauce or spicy mayo.
