How To Make Hasselback New Potatoes with Oregano

- 8 small new potatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh oregano leaves, for garnish
Instructions

Preheat the oven to 425°F (220°C).

Cut slits into each potato, making sure not to cut all the way through.

Place the potatoes on a baking sheet.

Drizzle with olive oil and sprinkle with dried oregano, salt, and pepper.

Using your hands, gently toss the potatoes to coat them evenly.

Roast in the oven for 30-40 minutes, or until golden and crispy.
