Serves:
Ingredients
- 4 large potatoes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
-
Preheat the air fryer to 400°F (200°C).
-
Wash and scrub the potatoes. Pat them dry.
-
Place a chopstick on each side of a potato and slice thin slits all along the potato, about 1/8-inch apart, allowing the chopsticks to prevent you from slicing all the way through.
-
In a small bowl, combine olive oil, minced garlic, dried thyme, salt, and black pepper.
-
Brush the seasoned oil mixture over the potatoes, making sure to get it in between the slits.
-
Place the potatoes in the air fryer basket and cook for 25-30 minutes, or until the potatoes are crispy and cooked through. Flip the potatoes halfway through the cooking time.
-
Remove the potatoes from the air fryer and sprinkle Parmesan cheese over them.
-
Return the potatoes to the air fryer and cook for an additional 2-3 minutes, or until the cheese is melted and golden.
-
Garnish with chopped fresh parsley before serving.
