Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 2 tablespoons grated Parmesan cheese
  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Wash and scrub the potatoes. Pat them dry.

  3. Slice the potatoes thinly, but not all the way through. Place them on a baking sheet.

  4. Drizzle olive oil over the potatoes, making sure to get it in between the slices.

  5. Season the potatoes with black pepper and salt, making sure to get it in between the slices as well.

  6. Bake the potatoes for 30 minutes, then remove from the oven and sprinkle grated Parmesan cheese over them.

  7. Return them to the oven and bake for another 15 minutes, or until the potatoes are crispy and golden brown.

  8. Remove from the oven and garnish with fresh chopped parsley.

  9. Serve hot and enjoy!
