  • 1 lb fresh green beans, trimmed
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1/2 tsp lemon zest
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Bring a pot of salted water to a boil. Add green beans and cook for 2-3 minutes, until tender-crisp. Drain and set aside.

  2. In a large skillet, heat olive oil and butter over medium heat. Add shallot and garlic, cooking until fragrant, about 1-2 minutes.

  3. Add green beans to the skillet, tossing to coat in the butter mixture. Cook for an additional 2-3 minutes, until beans are fully cooked and slightly caramelized.

  4. Remove from heat and stir in lemon zest, salt, and pepper.

  5. Serve immediately.
