Ingredients

  • 1 pre-made pie crust
  • 4 ounces goat’s cheese, crumbled
  • 1 cup fresh watercress
  • 4 eggs
  • 1 cup milk
  • salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Roll out the pie crust and press into a 9-inch pie dish.

  3. Spread the crumbled goat’s cheese evenly over the pie crust.

  4. Sprinkle the watercress over the goat’s cheese.

  5. In a bowl, whisk together the eggs, milk, salt, and pepper.

  6. Pour the egg mixture over the watercress and goat’s cheese.

  7. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and golden brown on top.

  8. Allow to cool for a few minutes before slicing and serving.
