Tender chicken breasts filled with creamy goat’s cheese and fragrant thyme, a mouthwatering combination.

Preparation: 15 minutes
Cooking: 25 minutes
Total: 40 minutes

Serves:

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 ounces goat’s cheese
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Make a pocket in each chicken breast by slicing horizontally through the middle, being careful not to cut all the way through.

  3. In a small bowl, mix the goat’s cheese and thyme together.

  4. Stuff each chicken breast with the goat’s cheese and thyme mixture, then season with salt and pepper.

  5. Heat the olive oil in a large oven-safe skillet over medium-high heat.

  6. Add the stuffed chicken breasts to the skillet and cook for 3-4 minutes on each side, until golden brown.

  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the chicken is cooked through and the cheese is melted and bubbly.

  8. Remove from the oven and let the chicken rest for a few minutes before serving.
