  • 2 cups fresh basil leaves
  • 1 cup fresh parsley leaves
  • 1/2 cup fresh mint leaves
  • 1/4 cup pine nuts
  • 3 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • Salt, to taste

Instructions

  1. In a blender or food processor, combine the basil, parsley, mint, pine nuts, garlic, and Parmesan cheese.

  2. Pulse until the ingredients are finely chopped and well combined.

  3. With the blender or food processor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.

  4. Taste and season with salt as needed.

  5. Transfer the pesto to a jar or container and refrigerate until ready to use.
