Ingredients

  • 2 lb mussels
  • 4 slices bacon, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup apple cider
  • 1/2 cup chicken broth
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Start by cleaning the mussels, removing any beards and rinsing them well under cold water.

  2. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon fat in the pot.

  3. Add the onion and garlic to the pot and cook until softened and translucent.

  4. Pour in the apple cider and chicken broth, and bring to a simmer.

  5. Add the mussels to the pot and cover with a lid. Steam the mussels for about 5-7 minutes, or until they have all opened. Discard any mussels that do not open.

  6. Remove the mussels from the pot and place them in a serving dish. Spoon the bacon and onion mixture over the mussels.

  7. Garnish with chopped parsley and season with salt and pepper to taste.

  8. Serve hot and enjoy!
