Ingredients
- 8 oz chestnuts, roasted and peeled
- 8 oz pasta
- 2 cups mushrooms, sliced
- 1/4 cup pine nuts
- 2 cloves garlic
- 1 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions

Cook the pasta according to package instructions. Drain and set aside.

In a food processor, combine the roasted chestnuts, pine nuts, garlic, basil, Parmesan cheese, olive oil, salt, and pepper. Pulse until smooth.

In a skillet, heat some olive oil over medium heat. Add the mushrooms and cook until browned and tender.

Add the cooked pasta and chestnut pesto to the skillet with the mushrooms. Stir until well coated and heated through.

Serve hot and garnish with extra grated Parmesan cheese, if desired.
