Ingredients

  • 1 sheet of puff pastry
  • 1 bunch of asparagus, trimmed
  • 2 potatoes, thinly sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Roll out the puff pastry onto the prepared baking sheet.

  3. Arrange the asparagus spears and potato slices on top of the pastry, leaving a border around the edges.

  4. Drizzle the olive oil over the vegetables and season with salt and pepper.

  5. Sprinkle the grated Parmesan cheese on top.

  6. Fold the edges of the puff pastry over the vegetables, creating a rustic-looking tart.

  7. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and crisp.

  8. Remove from the oven and sprinkle with chopped fresh parsley.

  9. Serve warm and enjoy!
