How To Make Crusty Cheddar Pies

Ingredients
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup grated cheddar cheese
- 1/4 cup ice water
Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the flour and salt.

Add the cold cubed butter to the flour mixture and cut it in using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Stir in the grated cheddar cheese.

Gradually add the ice water, a few tablespoons at a time, until the dough comes together and can be formed into a ball.

Transfer the dough onto a lightly floured surface and knead it a few times until it becomes smooth.

Roll out the dough to about 1/4 inch thickness and use a round cookie cutter to cut out circles.

Place a spoonful of the cheddar cheese filling on one half of each circle, leaving a small border around the edges.

Fold the other half of the dough over the filling and press the edges together to seal.

Place the pies onto the prepared baking sheet and brush the tops with beaten egg for a shiny finish.

Bake in the preheated oven for 20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

Allow the pies to cool slightly before serving.
