Ingredients
- 1 head of romaine lettuce, chopped
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 carrot, grated
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh herbs (such as parsley or cilantro)
- 1/4 cup crumbled feta cheese
- 1/4 cup sliced almonds
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

In a large bowl, combine the lettuce, cucumber, bell pepper, carrot, cherry tomatoes, red onion, fresh herbs, feta cheese, and sliced almonds.

In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper.
