Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 carrot, grated
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh herbs (such as parsley or cilantro)
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sliced almonds
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the lettuce, cucumber, bell pepper, carrot, cherry tomatoes, red onion, fresh herbs, feta cheese, and sliced almonds.

  2. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately and enjoy!
