How To Make Choc-peanut fondants with chocolate soil & cherries

Ingredients
- 150g dark chocolate, chopped
- 100g butter
- 100g sugar
- 2 eggs
- 60g all-purpose flour
- 40g roasted peanuts, chopped
- 50g chocolate cookie crumbs (for chocolate soil)
- 16 fresh cherries (for garnish)
Instructions

Preheat the oven to 180°C (350°F).

Melt the chopped dark chocolate and butter in a heatproof bowl set over a pan of simmering water. Stir until smooth.

In a separate bowl, whisk the sugar and eggs until light and fluffy.

Gradually pour the melted chocolate mixture into the egg mixture, whisking continuously.

Sift the flour into the chocolate mixture and fold gently until just combined. Stir in the chopped peanuts.

Grease four individual ramekins and divide the batter evenly among them.

Place the ramekins on a baking tray and bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.

While the fondants are baking, prepare the chocolate soil by mixing the chocolate cookie crumbs with a little melted chocolate to resemble soil texture. Set aside.

Once the fondants are baked, remove them from the oven and let them sit for a minute before carefully inverting them onto serving plates.

Sprinkle the chocolate soil around the fondants and garnish with fresh cherries.
