How To Make Matzo Granola with Coconut, Cashew & Cranberry

Ingredients
- 4 sheets of matzo, broken into small pieces
- 1 cup of shredded coconut
- 1 cup of cashews
- 1/2 cup of dried cranberries
- 1/4 cup of honey
- 2 tablespoons of coconut oil, melted
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of salt
Instructions

Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.

In a large bowl, combine the broken matzo pieces, shredded coconut, cashews, and dried cranberries.

In a separate small bowl, whisk together the honey, melted coconut oil, vanilla extract, cinnamon, and salt.

Pour the honey mixture over the matzo mixture and stir until everything is well coated.

Spread the granola mixture evenly onto the prepared baking sheet.

Bake for 15-20 minutes, or until the granola is golden brown and crispy, stirring once halfway through.

Remove from the oven and let it cool completely before storing in an airtight container.
