How To Make Lime Prawn Cocktail Pitta Salad

Ingredients
- 1 lb (450g) cooked prawns
- 2 limes, juiced and zested
- 2 tbsp olive oil
- 1 clove of garlic, minced
- 1 tsp honey
- Salt and pepper to taste
- 4 pitta breads
- 2 cups mixed salad greens
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- Fresh cilantro, for garnish
Instructions

In a large bowl, whisk together lime juice, lime zest, olive oil, garlic, honey, salt, and pepper.

Add cooked prawns to the bowl and toss to coat them well in the lime dressing. Let marinate for 5 minutes.

Meanwhile, toast pitta breads in a toaster or oven until warm and slightly crispy.

Cut the pitta breads in half and open the pockets.

Fill each pitta pocket with a handful of mixed salad greens, diced cucumber, and thinly sliced red onion.

Top with marinated prawns and garnish with fresh cilantro.
