How To Make Citrus Salmon Salad

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons orange juice
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • Salt and pepper, to taste
  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup toasted almonds, chopped

Instructions

  1. Preheat the grill or stovetop grill pan.

  2. In a small bowl, whisk together olive oil, lemon juice, orange juice, lemon zest, orange zest, salt, and pepper.

  3. Brush the salmon fillets with the citrus marinade.

  4. Grill the salmon for about 4-5 minutes on each side, or until cooked through.

  5. Remove the salmon from the grill and let it rest for a few minutes.

  6. In a large bowl, combine the salad greens, cherry tomatoes, red onion, parsley, and toasted almonds.

  7. Drizzle the remaining citrus marinade over the salad and toss to combine.

  8. Divide the salad onto plates and top each with a grilled salmon fillet.

  9. Serve immediately.
