Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 large onion, sliced
  • 2 cloves of garlic, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until softened.

  2. Add the cauliflower, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes until the cauliflower is tender.

  3. Use an immersion blender or transfer the mixture to a blender and blend until smooth.

  4. Return the mixture to the pot and stir in the heavy cream. Cook for an additional 5 minutes, until heated through.

  5. Serve the cauliflower and onion cream hot, garnished with chopped fresh parsley.
