Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 8 oz wild mushrooms, sliced
  • 2 tbsp butter
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.

  2. Add cauliflower florets, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until cauliflower is tender.

  3. Use an immersion blender or transfer to a blender to puree the soup until smooth.

  4. Return the soup to the pot, stir in the heavy cream, and season with additional salt and pepper if needed. Heat over low heat until warmed through.

  5. In a separate pan, melt butter and sauté the wild mushrooms until they are browned and tender.

  6. Serve the cream of cauliflower soup in bowls, topped with sautéed wild mushrooms. Garnish with fresh parsley.
