Ingredients

  • 1 small head of cauliflower, cut into florets
  • 1 cup grated cheddar cheese
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/4 cup milk
  • 2 green onions, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Oil, for frying
  • for warm pepper relish:
  • 2 bell peppers, diced
  • 1/2 red onion, diced
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper, to taste

Instructions

  1. Steam the cauliflower until tender. Mash it with a fork or blend in a food processor until it resembles rice.

  2. In a bowl, combine the mashed cauliflower, cheddar cheese, flour, beaten eggs, milk, green onions, garlic powder, paprika, salt, and pepper.

  3. Heat oil in a pan over medium heat. Drop spoonfuls of the cauliflower mixture into the pan and flatten slightly. Cook for 3-4 minutes on each side until golden brown. Repeat with the remaining mixture.

  4. For the warm pepper relish, heat olive oil in a pan over medium heat. Add the bell peppers, red onion, and garlic. Cook for 5-7 minutes until softened.

  5. Stir in the red wine vinegar and season with salt and pepper.

  6. Serve the cauliflower fritters with the warm pepper relish on top.
