How To Make Cauliflower & Cheese Fritters with Warm Pepper Relish Recipe

Ingredients
- 1 small head of cauliflower, cut into florets
- 1 cup grated cheddar cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup milk
- 2 green onions, chopped
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Oil, for frying
- for warm pepper relish:
- 2 bell peppers, diced
- 1/2 red onion, diced
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper, to taste
Instructions

Steam the cauliflower until tender. Mash it with a fork or blend in a food processor until it resembles rice.

In a bowl, combine the mashed cauliflower, cheddar cheese, flour, beaten eggs, milk, green onions, garlic powder, paprika, salt, and pepper.

Heat oil in a pan over medium heat. Drop spoonfuls of the cauliflower mixture into the pan and flatten slightly. Cook for 3-4 minutes on each side until golden brown. Repeat with the remaining mixture.

For the warm pepper relish, heat olive oil in a pan over medium heat. Add the bell peppers, red onion, and garlic. Cook for 5-7 minutes until softened.

Stir in the red wine vinegar and season with salt and pepper.

Serve the cauliflower fritters with the warm pepper relish on top.
