How To Make Carrot, Lentil & Orange Soup

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 carrots, peeled and chopped
- 1 cup red lentils
- 4 cups vegetable broth
- Juice of 2 oranges
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

Add the carrots and lentils to the pot and stir to coat. Cook for 2-3 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 25-30 minutes, or until lentils are tender.

Remove from heat and let the soup cool slightly. Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the orange juice. Season with salt and pepper to taste.

Heat the soup over low heat until warmed through.

Serve hot, garnished with fresh parsley.
