Ingredients

  • 1 small cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • Vegetable oil for frying

Instructions

  1. Steam the cauliflower florets until just tender, about 5 minutes. Drain and let cool.

  2. In a large bowl, whisk together the flour, Parmesan cheese, minced garlic, salt, and black pepper.

  3. In a separate bowl, beat the eggs.

  4. Add the cauliflower florets to the flour mixture and toss to coat evenly.

  5. Dip each coated floret into the beaten eggs, then place in hot vegetable oil in a skillet over medium-high heat.

  6. Fry the fritters until golden brown and crispy, about 2-3 minutes per side.

  7. Remove from the oil and drain on paper towels.

  8. Serve hot as a tasty appetizer or side dish.
