How To Make Caprese Salad with Quinoa

Ingredients
- 1 cup quinoa
- 2 cups cherry tomatoes, halved
- 8 oz mozzarella cheese, diced
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions

Cook the quinoa according to package instructions. Let it cool.

In a large bowl, combine the cooked quinoa, cherry tomatoes, mozzarella cheese, and fresh basil.
