How To Make Butternut Chilli

Ingredients

  • 1 butternut squash, peeled, seeded, and diced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) of black beans, rinsed and drained
  • 1 can (15 oz) of kidney beans, rinsed and drained
  • 1 can (15 oz) of diced tomatoes
  • 1 cup of vegetable broth
  • 2 tablespoons of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until the onion is translucent.

  2. Add the butternut squash and cook for another 5 minutes, stirring occasionally.

  3. Add the black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, and paprika. Season with salt and pepper. Stir well to combine.

  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 30-40 minutes, or until the butternut squash is tender.

  5. Serve hot, topped with your choice of shredded cheese, sour cream, diced avocado, and chopped cilantro.
