Ingredients
- 1 whole chicken, approximately 4 lbs
- 1 small butternut squash, peeled, seeds removed, and cut into cubes
- 1 chorizo sausage, sliced
- 1 red chili, sliced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of paprika
- Juice of 1 lemon
Instructions

Preheat the oven to 375°F (190°C).

In a large roasting pan, place the chicken in the center and arrange the butternut squash cubes around it.

Scatter the sliced chorizo, chili, and minced garlic over the chicken and butternut squash.

Drizzle the olive oil over everything and season with salt, black pepper, and paprika.

Squeeze the lemon juice over the chicken and vegetables.

Roast in the preheated oven for 1 hour and 30 minutes or until the chicken is cooked through and the butternut squash is tender, basting occasionally with the pan juices.

Remove from the oven and let the chicken rest for 10 minutes before carving.

Serve the roast chicken with the roasted butternut squash, chorizo, and chili on a platter.
