Much like pizzas, the world is your oyster when it comes to quesadillas. Stuff them with whichever filling suits your fancy. If you’re stuck for ideas, then these quesadilla recipes are just what you need to get started on your own quesadilla party.
Serves:
Ingredients
- 1 lb beef, thinly sliced
- 1 cup broad beans, cooked
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped fresh cilantro
- Sour cream and salsa, for serving
Instructions
-
In a large skillet, heat olive oil over medium-high heat. Add beef and cook until browned. Drain any excess fat.
-
Add cooked broad beans, chili powder, cumin, salt, and black pepper to the skillet. Cook for an additional 2-3 minutes, until the flavors are well combined.
-
Lay a flour tortilla on a clean surface. Sprinkle a handful of shredded cheese on one half of the tortilla. Spoon a portion of the beef and broad bean mixture on top of the cheese. Sprinkle with chopped cilantro. Fold the tortilla in half, pressing firmly to seal the edges.
-
Heat a large skillet or griddle over medium heat. Cook the quesadilla for 2-3 minutes on each side, until the tortilla is crispy and golden brown and the cheese is melted.
-
Repeat with remaining tortillas and filling.
-
Slice the quesadillas into wedges and serve hot with sour cream and salsa.
