Ingredients

  • 2 cups dried white beans
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Soak the white beans overnight in water, then drain and rinse.

  2. In a large pot, heat some oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté until vegetables are tender.

  3. Add the soaked beans, vegetable broth, thyme, and bay leaf to the pot. Bring to a boil, then reduce heat to low and cover.

  4. Simmer for about 2 hours, or until beans are tender and the broth has thickened slightly. Stir occasionally.

  5. Season with salt and pepper to taste. Remove the thyme sprigs and bay leaf before serving.
