Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. Season the beef roast with salt and black pepper.

  3. Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat.

  4. Brown the beef on all sides, then remove from the pot and set aside.

  5. In the same pot, add the sliced onion and minced garlic. Sauté until the onion is translucent.

  6. Add the beef broth, balsamic vinegar, soy sauce, brown sugar, Dijon mustard, and dried thyme to the pot.

  7. Stir well to combine, then return the beef roast to the pot.

  8. Cover the pot and transfer it to the preheated oven.

  9. Braise the beef for about 3 hours, or until it is very tender and easily shreds with a fork.

  10. Remove the pot from the oven and transfer the beef to a cutting board.

  11. Shred the beef using two forks, then return it to the pot and mix with the sauce.

  12. Serve the balsamic braised beef hot over mashed potatoes or cooked rice.
