Ingredients

  • 1.5 lb pork loin
  • 8 oz chorizo, casing removed
  • 1 cup cooked white beans
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut a slit lengthwise in the pork loin to create a pocket for stuffing.

  3. In a skillet, cook the chorizo over medium heat until browned and cooked through. Remove from the heat.

  4. Stuff the cooked chorizo into the pocket of the pork loin, pressing it in firmly.

  5. Season the pork loin with salt, pepper, smoked paprika, cumin, and oregano.

  6. Heat some olive oil in an oven-safe skillet and sear the stuffed pork loin on all sides until browned.

  7. Transfer the skillet to the preheated oven and roast the pork loin for about 1 hour or until the internal temperature reaches 145°F (63°C).

  8. While the pork is roasting, prepare the braised beans. Heat olive oil in a pot over medium heat and sauté the diced onion and minced garlic until softened.

  9. Add the cooked white beans, chicken broth, and season with salt and pepper. Bring to a simmer and let cook for about 20 minutes, stirring occasionally.

  10. Remove the stuffed pork loin from the oven and let it rest for 10 minutes before slicing.

  11. Serve the sliced Chorizo-stuffed pork loin with the braised beans.
