Ingredients

  • 1 lb flank steak
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat your grill or grill pan over medium-high heat.

  2. Season the flank steak with salt, pepper, and olive oil. Grill for about 4-5 minutes per side for medium-rare doneness. Let it rest for 5 minutes, then slice against the grain.

  3. In a bowl, combine cooked rice, black beans, corn, avocado slices, diced tomatoes, chopped cilantro, and diced red onion.

  4. In a small bowl, mix together sour cream, lime juice, salt, and pepper to create a dressing.

  5. In individual serving bowls, layer the rice and bean mixture, grilled steak slices, and drizzle with the sour cream dressing. Top with shredded cheese.

  6. Serve immediately.
