  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 1 avocado, sliced
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine cooked rice, black beans, corn, bell pepper, and red onion.

  2. In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.

  3. Pour the dressing over the rice and bean mixture and toss well to combine.

  4. Divide the mixture into serving bowls and top with sliced avocado.

  5. Garnish with fresh cilantro and serve.
