Ingredients

  • 1 cup fresh mixed berries (such as strawberries, blueberries, and raspberries)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1/4 cup extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a blender or food processor, combine the berries, red wine vinegar, and honey. Blend until smooth.

  2. Slowly drizzle in the olive oil while blending, until the vinaigrette emulsifies.

  3. Season with salt and pepper to taste.

  4. Store in a jar in the refrigerator until ready to serve.

  5. Shake well before using. Serve over your favorite salad.
