Ingredients

  • 2 medium beetroots, grated
  • 200g feta cheese, crumbled
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, lightly beaten
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine grated beetroot, feta cheese, onion, garlic, breadcrumbs, parsley, cumin, salt, and black pepper.

  2. Add the eggs to the mixture and mix well to combine all the ingredients.

  3. Form the mixture into patties, about 2 inches in diameter.

  4. Heat olive oil in a large skillet over medium heat.

  5. Cook the patties for 3-4 minutes on each side, until golden brown.

  6. Serve hot with a side of tzatziki sauce or a fresh salad.
