Ingredients

  • 4 sub rolls
  • 1 large beetroot, roasted and sliced
  • 1 cup of chickpeas, cooked and crispy
  • 1 cup of hummus
  • 1 cup of arugula
  • 1/4 cup of sliced red onion
  • 1/4 cup of crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Slice the sub rolls in half lengthwise.

  3. Spread the hummus on both sides of the rolls.

  4. Layer the roasted beetroot slices on the bottom half of the rolls.

  5. Sprinkle the crispy chickpeas on top of the beetroot.

  6. Top with arugula, red onion, and crumbled feta cheese.

  7. Season with salt and pepper to taste.

  8. Place the top half of the rolls on the sandwich.

  9. Press the sandwich together gently.

  10. Serve and enjoy!
