How To Make Beetroot & Feta Pasta

Ingredients

  • 12 oz (340g) pasta
  • 2 medium-sized beetroots, peeled and diced
  • 1 red onion, thinly sliced
  • 3 cloves of garlic, minced
  • 4 tbsp olive oil, divided
  • 1 tsp dried thyme
  • 1 tbsp balsamic vinegar
  • 4 oz (113g) feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Toss the diced beetroot with 2 tbsp of olive oil, minced garlic, dried thyme, salt, and pepper. Spread them out on a baking sheet and roast for 30-35 minutes until tender.

  3. Cook the pasta according to package instructions until al dente. Drain and set aside.

  4. In a large skillet, heat the remaining 2 tbsp of olive oil over medium heat. Add the sliced red onion and cook until softened and slightly caramelized, about 8-10 minutes.

  5. Add the roasted beetroot, cooked pasta, and balsamic vinegar to the skillet. Toss everything together until well combined and heated through.

  6. Remove from heat and stir in the crumbled feta cheese. Season with additional salt and pepper if needed.

  7. Serve the Beetroot & Feta Pasta hot, garnished with fresh basil leaves.
