How To Make Bean & Pepper Chilli

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeds removed and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

  2. Add the diced bell peppers and jalapeno pepper to the pot, and cook for another 5 minutes until they start to soften.

  3. Stir in the black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and pepper.

  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes, stirring occasionally.

  5. Taste and adjust seasonings, if needed.

  6. Serve hot, garnished with shredded cheese, sour cream, and chopped cilantro, if desired.
