How To Make Aubergine & Sesame Dan-Dan-Style Noodles

Ingredients
- 2 large aubergines, sliced into thin strips
- 200g dan-dan noodles
- 3 tbsp sesame oil
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tbsp chili oil (optional)
- 1/4 cup roasted peanuts, chopped
- 2 spring onions, sliced
- Sesame seeds, for garnish
- Fresh coriander, for garnish
Instructions

Preheat the oven to 200°C (400°F). Place the aubergine slices on a baking tray and drizzle with 2 tbsp of sesame oil. Toss to coat evenly and roast for 20 minutes, until tender and slightly golden.

Meanwhile, cook the dan-dan noodles according to the package instructions. Drain and set aside.

In a small bowl, whisk together the remaining 1 tbsp of sesame oil, minced garlic, soy sauce, rice vinegar, brown sugar, and chili oil (if using).

In a large pan, heat the sauce mixture over medium heat. Add the roasted aubergine slices and dan-dan noodles. Toss to coat well and cook for 3-4 minutes, until heated through.

Serve the noodles and aubergine in bowls, topped with chopped peanuts, sliced spring onions, sesame seeds, and fresh coriander.
