How To Make Aubergine & Sesame Dan-Dan-Style Noodles

Ingredients

  • 2 large aubergines, sliced into thin strips
  • 200g dan-dan noodles
  • 3 tbsp sesame oil
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp chili oil (optional)
  • 1/4 cup roasted peanuts, chopped
  • 2 spring onions, sliced
  • Sesame seeds, for garnish
  • Fresh coriander, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F). Place the aubergine slices on a baking tray and drizzle with 2 tbsp of sesame oil. Toss to coat evenly and roast for 20 minutes, until tender and slightly golden.

  2. Meanwhile, cook the dan-dan noodles according to the package instructions. Drain and set aside.

  3. In a small bowl, whisk together the remaining 1 tbsp of sesame oil, minced garlic, soy sauce, rice vinegar, brown sugar, and chili oil (if using).

  4. In a large pan, heat the sauce mixture over medium heat. Add the roasted aubergine slices and dan-dan noodles. Toss to coat well and cook for 3-4 minutes, until heated through.

  5. Serve the noodles and aubergine in bowls, topped with chopped peanuts, sliced spring onions, sesame seeds, and fresh coriander.
