How To Make Vegan Black Bean Soup Recipe
Hearty and nutritious vegan soup loaded with black beans, veggies, and spices.

Ingredients
- 1 can black beans, drained and rinsed
- 1 red onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño pepper, diced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 4 cups vegetable broth
- 1 large tomato, diced
- Salt and pepper, to taste
- 1 tbsp olive oil
- Fresh cilantro, chopped for topping
- Lime wedges
Instructions

Heat olive oil in a Dutch oven over medium heat. Add garlic, onion, jalapeño pepper, and red bell pepper.

Cook until veggies are softened, about 5 minutes. Add cumin, paprika, and cayenne pepper and stir well.

Add vegetable broth, black beans, diced tomato, salt, and pepper. Bring to a boil.

Reduce heat and let it simmer for 20 minutes.

Take off the heat and let it cool for 10 minutes. Blend the soup until smooth.

Reheat and serve with chopped cilantro and lime wedges.
