How To Make Vegan Chickpea and Vegetable Soup Recipe

This hearty soup is loaded with chickpeas and fresh vegetables in a flavorful broth.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 2 medium carrots, chopped
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can chickpeas, drained and rinsed
  • 5 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.

  2. Add the onion and garlic and sauté for about 2 minutes until fragrant.

  3. Add the celery, carrots, pepper, and zucchini and sauté for another 5 minutes.

  4. Add the chickpeas, vegetable broth, thyme, oregano, salt, and pepper.

  5. Bring the soup to a boil, reduce heat, and let simmer for 20 minutes.

  6. Serve hot and enjoy!
